(whether at college or from books or DVD’s) is taught,
first and foremost that the recipe is king. They learn recipes
not method. Yes, there is some technique shown at colleges
and on DVD’s but it always comes second to recipes and
this is mainly because students have to pass exams and colleges run on a very limited budget.

To teach someone to cook so that they UNDERSTAND what they’re doing is a very expensive business because they must cook, cook and cook some more. This uses a lot of expensive ingredients and a lot of one-to-one time from the tutor.

To teach someone to cook by giving them a lot of theory and recipes from books and very little practical experience is much, much cheaper and this is what most colleges and courses do.
